Mooli Cake Simplified Version 蘿蔔糕(簡易版)

蘿蔔糕(簡易版)

Ingredients

  • 800 g mooli shredded
  • 10 Dried Mushroom soaked and thinly sliced
  • 1 Chinese Sausage sliced
  • 2 tablespoons Fried Onions
  • 2 tablespoon Soy Sauce
  • 1 pinch Salt
  • 1 pinch Ground Pepper
  • 400 g Rice Flour
  • 800 g Water
  • 400 g Rice Flour

Instructions

  • Mix together rice flour and water, set aside.
  • Stir fry the Chinese sausage, fried onions and mushroom together first, add soy sauce and mooli, cook until the mooli is semi-transparent.
  • Add salt, pepper and the rice flour mixture into the mooli, turn to low heat and keep stiring until the whole mixture starts to thicken.
  • Put the thicken mixture into suitable containers and steam for 30 - 50 minutes.

Basic Bread Dough (Bread Machine Method)

Ingredients

  • 2 1/2 cup Strong flour
  • 1/2 cup Plain flour
  • 1 teaspoon Yeast
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 1/4 cup Water
  • 1-2 tablespoon Oil

Instructions

  • Use "dough" function of bread machine.
  • Divide the finished dough into 4 portions, covered and rest for 20 minutes.
  • Adding any filling of choice, do the final shaping, and rest for 50 minutes. (or 40 minutes if pre-heat oven to 50C, turn turn off the oven, it can be used as warming drawer).
  • Oven 170C, and bake for 20-25 minutes.

時間真的過得好快, 一轉眼, 新的一年在我們的眼前開啟. 自從去年十月趁回去以前住的城市辦事時繞道去看了妳一會兒, 我都沒有再想到妳, 直到今天.

我不知道為何會突然想起妳來. 或許是因為農曆新年快到了, 讓我想到從前共事時, 為著新年秀和中文學校孩子們的表演而忙得焦頭爛額, 很累但也很快樂的時光吧.

十九年是一段不算短的日子. 老實說, 我已經記不清妳說話的聲音是怎樣的, 也不忍心去把照片翻出來看, 就讓記憶中妳那抹常掛在嘴角的微笑靜靜沉澱在我的內心就好.

記得我說過, 因為距離, 以後能去看妳的機會是越來越少, 可能只有用形式替代了嗎.

我是想妳了! 明天, 我會去帶一束妳最愛的花回來.

Ingredients

  • 500 g bread flour
  • 14 g fast action dried yeast
  • 2 tsp Salt
  • 400 ml Water
  • 2 tbsp olive oil

Instructions

  • Mix all ingredients together to form a dough, put in oiled bowl and leave in warm place to double the size of the dough.
  • Roll out the dough, put on the ready oiled baking sheets and leave in warm place to rise again, then sprinkle the chosen toppings and more olive oil.
  • Bake in preheated oven (180 degree C) for approx 15 minutes.

Homemade Tofu Skins 自製豆腐皮

Ingredients

  • 1 1/3 cups dried soy beans 8 ounces
  • 6 cups water preferably filtered

Instructions

  • In a large bowl, cover the soy beans with 3 inches of cold water. Cover and let stand overnight at room temperature. Drain the soy beans and transfer them to a blender. Add 3 cups of the filtered water and puree at high speed until as smooth as possible.
  • Line a large sieve with a clean cotton napkin or 3 layers of cheesecloth and set the sieve over a heatproof bowl. In a large pot, bring 3 cups of the filtered water to a boil. Add the soy bean puree and bring just to a boil (be careful not to let it boil over). Boil over moderately high heat for exactly 8 minutes, stirring constantly with a heatproof rubber spatula to prevent sticking and scorching.
  • Carefully pour the mixture into the prepared sieve. Let stand until just cool enough to handle, about 20 minutes. Gather the ends of the napkin or cheesecloth and squeeze to extract as much of the soy milk as possible; the remaining solids should be nearly dry. Discard the solids and skim off any foam from the soy milk. You should have about 4 cups of soy milk.
  • In a large, clean saucepan, bring the soy milk to just below a simmer. A skin will slowly form on the surface of the soy milk. When the skin is fully formed, use a paring knife to carefully detach it from the side of the saucepan. Carefully slide a chopstick or skewer under the skin and lift it from the milk. Let drain for a few seconds before transferring to a plate. Repeat, stacking the tofu skins, until the soy milk is depleted.

兒時記憶 – 蟬

今天聽了聽好久沒有接觸的民歌, 一首”秋蟬” 勾起了一件藏放在我腦海深處的記憶.

小時候學芭蕾舞的老師家是一座很舊式的日本平房, 有著一個大花園. 在這花園裡我最記得的是有一顆大樹. 夏天時, 有好多的蟬, 常常在休息時間裡坐在樹下乘涼, 聽聽蟬鳴. 突然有一天蟬鳴少了, 但地上卻多了好多的棕色東西. 撿起來一看, 是蟬殼! 看到大家的好奇, 老師請她的父親來為我們解釋蟬蛻.

第一次看見蟬殼時, 覺得挺恐怖的, 後來看多了也就習慣了. 直到有天突發異想, 覺得好玩, 我們幾個同學就撿了一大堆的殼串成項鍊, 得意的各自戴著回家. 我才一踏進家門, 差點把媽媽嚇昏, 直到我把項鍊拿掉, 她才願意讓我靠近身邊.

這雖然是許多年前的事了, 但偶爾和媽媽聊天提起時, 她還是會搖頭嘆氣的說我就是愛作怪. 哈哈! 就算是我作怪吧, 但對我而言這可是好玩的記憶呀. 😀

Wye View Project 1 – Demolition Turkey Shed 01/02/2015

Months after we took over Wye View, weather starts to get better so we finally begin to take on some outdoor jobs that need doing.

First of all, the old turkey shed. It’s in a state of beyond repair, so the only solution is to demolish the whole thing.

So here he goes…
